Making Applesauce

Last week, Drew and I made homemade applesauce and yum is it good!  It was easy too - time consuming - but easy.  First, we cut the apples into 6ths. Then put them in the pressure cooker with about an inch of water (the most time consuming part).  Once they cooked down and got mushy, they went through the Kitchen Aid Mixer attachments - 3 total attachments plus the mixer.  Once the sauce separated from the peel, core, and stems, we added just a little bit of cinnamon. Finally, we put them in hot jars and put them in the canner.  And Voila APPLESAUCE!!!

Okay see the little hole on the far middle left of this picture?  That's where all the waste - core, peel, and stem - came out! It was so awesome. I had 2 separate bowls next to each other and the attachments did everything.  Nothing to it but to do it!

It took us 5 hours to can 2 bushels or 8 pecks of apples and we ended up with 56 jars of applesauce plus 1 casualty.  I can't wait to do it next year!
